A sweet entrance is perceived, which becomes fluid in mouth, evenly impregnating it and letting an intense apple flavour to be discovered, turning then to almond and nuts when the oil rests on the palate. Strong bitterness and marked spicyness remains in mouth for a few seconds.

Aceite de perfil equilibrado y complejo ya que esta compuesto en su totalidad de variedad Arauco pero seleccionando los frutos en tres estados de su madurez (verde, envero (cuando comienza a cambiar el color de verde a negra y madura) Frutado de oliva verde medio alto, identificable en nariz y boca. Gran diversidad de aromas vegetales secundarios, sobretodo manzana verde, kiwi y piel de plátano, aunque también aparecen matices a otras frutas maduras como fresa. destaca su amargor y picante con una astringencia final que no interfiere en su perfil.
